Description of Work

*Salary Grade 55* Recruitment Range: $24,405-$29,000*


The Culinary services unit is responsible for the preparation and serving of meals for NCCAT participants and guests.  This position will assist the Food Services Supervisor in the culinary services operations including, but not limited to, food preparation and presentation, and enforcing sanitation and health standards of Environmental Health and the Jackson County Health Department.

This position is responsible for the preparation and cooking of all food.  The incumbent will ensure the dining room is set up for meals and that food served is appealing and appetizing while maintaining the highest of health standards.  The Cook II will assist the Food Services Supervisor with the training and directing of the work flow of lower level employees in food preparation, washing dishes & cooking utensils and the cleaning of work and dining areas.  There will be contact with NCCAT staff as well as NCCAT participants and guests.  


Knowledge, Skills and Abilities / Competencies

A candidate must be able to stand on his/her feet for extended periods of time and be able to lift and carry either a heavy item or several items at once.

Must have knowledge of and experience with various kitchen equipment including meat slicers, food processors, measuring equipment, sharp knives, mixers, ovens, fryers, and stoves.

Close visual attention, concentration, and manipulative skills will be required in the use of kitchen equipment and to insure personal safety and the safety of co-workers.

The Cook II will need to ensure that all equipment is clean and in good working order. 

Scheduling of seminars and meals by NCCAT faculty and staff may impact work schedules. 

Special dietary needs of guests may also cause changes in food preparation. 

Flexibility is required in this position.

Knowledge of food preparation, cooking, and baking as well as cleaning methods, and equipment and supplies usage is required. 

Ability to interpret and follow recipes and prescribed menus as well as oral and written instructions; and knowledge and ability to present food in a sanitary and attractive way is required. 

Ability to maintain high sanitation standards as applied to personal cleanliness, food sanitation, equipment, and serving utensils. 

Ability to follow oral and written instructions as well as keeping records and reports on operations. 

Possession of or ability to secure a valid health certificate issued by the County Health Department is required.

Possession of or ability to obtain a ServSafe Certification within the first six months of employment.


Minimum Education and Experience Requirements

The minimum education and experience required for this position is experience in food preparation that is directly related to the job and consistent with accepted practices of the trade equivalent to two years of experience in a commercial and/or institutional setting.
